The Best Gluten Free Chocolate Brownies EVER!

These have to be one of the nicest Chocolate Brownie Recipes I've ever tried - they're gooey, chocolaty and crumbly all in one bite! I don't always add marshmallows, but thought I'd give it a try this time, and boy they make a lovely addition!

The recipe comes originally from Adriana Rabanovich from Gluten Free Kids and they are a firm favourite in the Whittall household!

Really simple and easy to make - why not give them a go!

Gluten Free Yorkshire Pudding

Now what's better than Beef and Yorkshire Pudding for Sunday lunch.....you can't beat it!
Today's find was from a group I follow on Facebook, and simply it uses cornflour in place of the normal wheat flour - genius!!

Recipe:-

Put some sunflower oil in a tin or a tray - I used a 12 hole jam tart tray (as that's all I'd got). Make sure the oil is really hot before you add the mix.

3 heaped tablespoons cornflour
150ml Milk (I used semi skimmed)
Pinch of Salt
3 Eggs

Put it all in a bowl and mix it up. Simple as that!

My oven was on about 190 and I cooked them for around 25 minutes, but I'd keep an eye on them after about 20 minutes.

The result was amazing, and tasted exactly like the real thing:-

Gluten Free Yuk Sung

I just had to share this recipe with you, as I think its probably one of the best things ive ever cooked - it tastes just like the 'real thing' and could have come straight from the local Chinese Takeaway.

I cannot take credit for this amazing dish, as its come from a guy called Pete who shares some fantastic Slimming World recipes on a forum called MiniMins.  You can find the link to the original recipe HERE.

The only tweak I had to make to Pete's Recipe was changing the Soy Sauce to a GF Tamari Soy Sauce which is available in most supermarkets here in the UK.

Pete’s Yuk Sung

Serves 2

Ingredients
120g Brown Rice
1 Vegetable Stock Pot
250g Tesco Healthy Living Pork Mince
100g Mushrooms, finely chopped
1 Red Pepper, finely chopped
1/2" Piece of Ginger
1 clove of Garlic
2 Spring Onions, finely chopped
3 tbsp Gluten Free Soy Sauce
2 tbsp Oyster Sauce
1 tbsp Cider Vinegar
Dash of Sesame Oil
1 Washed and Chilled Iceberg Lettuce



Method
Weigh out 120g brown rice, wash in a sieve until the water runs clear then fill a saucepan with 400ml of cold water and add rice, bring to the boil then turn heat down and simmer for 40 mins.

Tip rice into a sieve and return to the saucepan, leave on the ring for a few minutes with a lid on to allow it to steam. Then put to one side.

Use a heavy bottomed frying pan, cook the mince until it is browned and all liquid has evaporated.

Add 1 Tbsp of the soy sauce, and then add the veg stock pot, mix well, add cider vinegar, chopped mushrooms, peppers, ginger, garlic , spring onions & cook for 5 mins then add the rice and mix thoroughly with the remaining soy sauce & sesame oil. Finally add oyster sauce.

Cook until the rice is hot, place mixture into freshly washed and chilled Iceberg Lettuce and enjoy!

Positive Results and How to Cope?

Happy Gluten Free New Year for 2015 - I hope you all have a wonderful year and get everything you wish for!  

My wish for this year is to start afresh with this blog, and to do this I suppose I need to explain a little bit about my family and our experiences with being Gluten Free and Coeliac.

My hubby Darren has been a Coeliac for nearly 8 years now, but when I had my little girl Emily (just over 7 years ago), I never imagined that the day would come when she would also receive the positive diagnosis of being a Coeliac - this happened on Monday December 22nd 2014.  She had gone through the blood test at our local Doctors, but because the TTG wasn't 10x the normal amount (60+) then she had to endure an endoscopy.  She was an absolute star and took it all in her stride - I on the other hand was a complete wreck, and felt VERY emotional for weeks leading up to the day and also on the morning of the hospital visit.



For most families im sure that have already gone through this, everyone has different emotions on how they cope with not only the tests but with the results and the aftermath of this.  I'm a bit of a mixed bag at the moment - one minute I think im on top of everything, and the next I feel like im going around in circles again.

My main issue is the fact that Emily is very 'picky' with her food and only eats a handful of items - most of which unfortunately contain Gluten.  How do you get a 7 year old to change her eating habits to not only GF but to start adding new foods to her list of 'safe' items.........this is the bit im stuck on!

I know time will tell as they say, and im sure we will be fine - am I just being an overprotective Mom or am I right to worry.......who knows!!

Anyway, enough rambling from me on my negative feelings on this as here are a few positive things: 
  • I will be putting my baking/cooking skills to the test and will endeavor to make more and more things Gluten Free so that I can cater for now 2/3's of our little family - I am now the odd one out!!
  • I will be rejoining Coeliac UK with a Family Membership.
  • I will be clearing out the whole of my Kitchen and getting rid of all the non GF foods - may as well try and start positively!!
  • I will finally get around to looking through all of those cook books that ive purchased over the past 8 years - don't think ive ever made one recipe out of any of them.......shocking!
  • I will hopefully be doing some product reviews along the way as well.
  • To lose another 2 stone whilst following the Slimming World diet, and trying to do it the Gluten Free way.
